Once upon a time a woman named Bettina married a guy named Bob. They settled in their little house and began a new life together. The book "A Thousand Ways to Please a Husband: With Bettina's Best Recipes" by Louise Bennett Weaver & Helen Cowles Le Cron, written in 1917, chronicles a year in the life from the Honeymoon.

It is quite different than most cookbooks in that there is a storyline that follows the recipes.

Here is Bettina's Emergency Shelf
6 cans pimientos (small size)
6 cans tuna (small size)
6 cans salmon (small size)
6 jars dried beef
12 cans corn
6 cans string beans
6 cans lima beans
6 cans devilled ham (small size)
6 cans tomatoes
6 pt. jars pickles
6 pt. jars olives
6 small cans condensed milk
6 boxes sweet wafers
1 pound box salted codfish
3 pkg. marshmallows
3 cans mushrooms
2 pkg macaroni

These are the basics for her emergency meals. What's in your emergency shelf?

I think this is one of those WTF-were-they-thinking? recipes. I was never a bologna or hotdog fan growing up or now for that matter. Good luck to those who have the stomach fortitude to try this.

Bologna Burgers
Retro - Unknown origin
About 45 minutes before serving or early in the day:
Into medium bowl, put 1/2 pound bologna through food grinder;* mix with 1/4 cup catchup and 1/4 cup mayonnaise. Spoon bologna mixture onto bottom halves of 8 hamburger buns, split. Place a slice of cheese from one 8-ounce package American cheese on top of bologna; top with bun halves. Wrap in foil; refrigerate, if heating later in the day.
About 30 minutes before serving:
Preheat oven to 375°F. Place wrapped Bologna Burgers on large cookie sheet; bake 20 to 25 minutes until piping hot. Makes 8 servings.

*Or, with sharp knife, finely chop bologna.

I have tons and tons of old newspaper clippings that I had been meaning to put in a scrapbook. Silly me. All this time I could've been posting all of the recipes that I have been keeping. I have no idea where some of them came from or even how good they are. However, I will be posting them for prosperity's sake. Once I get my own computer back up and my scanner attached, I will also post the old ads as well.

Dealing with a sick baby and running out of the store-bought stuff, and I was reminded of a homemade recipe for Gatorade. I remembered that it was fairly easy and wondered if there could be a simple recipe for Pedialyte as well. The results seemed fairly conclusive and here is what I ended up with:

Homemade Pedialyte

1 teaspoon salt (preferably one that has trace minerals like sea salt or Morton Lite)
7 Tablespoons sugar
1 quart water

Optional: 1 package unsweetened Kool-Aid and 1 teaspoon baking soda

Mix all together and until sugar and salt is dissolved. Store in refrigerator.

Yesterday we went to Annies's Orchard in Wilcox. We picked peaches and picked up some fresh-picked produce, which included a couple of gorgeous Gold Rush Zucchinis. Naturally, I decided to make zucchini bread. The original recipe is from Allrecipes.com with suggested alterations.

Gold Rush Zucchini Bread

3 eggs
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
2 cups white sugar
3 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts

Crumb Topping:
1/2 cup brown sugar
1/2 cup walnuts
1/2 all-purpose flour
2 tablespoons butter
2 teaspoons cinnamon

Preheat oven to 325F . Prepare two 8x4" loaf pans, by lightly greasing and flouring them.

Grate zucchini and let drain in colander. Gently squeeze out liquid before using.

Sift together dry ingredients in a medium-sized bowl. In a large bowl, beat eggs. Add oil and applesauce. Stir in sugar. Add in zucchini and vanilla. Combine dry ingredients into zucchini mixture. Divide batter into the prepared pans and bake for 60-70 minutes or until toothpick inserted into middle comes out clean.
